The guiding principle of our land & food practice is to work with nature not against it. In this way we tend to ourselves, to the land, and to our shared future.
We work with permaculture principles to observe and mirror nature in all of our projects. With this bio-mimicry we build productive, self-sustaining ecosystems whilst deepening our own connection with nature’s wisdom.
We recognise that we are all living organisms on a living Earth. As we cultivate and restore the wellbeing of our soils and our planet, we cultivate and restore the wellbeing within ourselves and the entire web of life.
We’ve planted thousands of native trees across the land for both food and fuel, as well as nearly 1km of edible hedges, two acres of orchards, and two acres of vegetables. We’ve developed an outdoor mushroom farm – amongst the first in the UK. We wild-tend native plants and are experimenting with edible ornamentals and bee-tending.

Our regenerative, hyper-local and simple food demonstrates a way of eating that continues the traditions of the past and supports our shared future. And, our Soil-to-Gut Food Philosophy reflects our belief that as we restore microbiomes in our soils, we restore microbiomes in our guts. In this way, our land and food practices create a bridge between personal and planetary health.
The food you eat here is a final expression of our land, lovingly tended and created by our land and food teams. Much is homegrown in our permaculture garden or wild-foraged on our land. It is nutrient-dense and deeply nourishing.
We keep our menus simple and our in-house retreat chefs creatively include whatever the land offers to ensure zero waste. Simple also means no chemicals. We are organic in principle, although we don’t believe we need a stamp on nature to prove it!
